Pinterest Challenge: Pot Roast Noodles

Since it's Father's Day weekend I let Phil go through all my favourite recipes on Pinterest and pick whatever one he wanted for dinner. So he chose these Pot Roast Noodles. A lot of work, but very delicious! For the original recipe click HERE.


What you will need:

1 can of sliced mushrooms (drained)
2 1/2 pound chuck roast
Coarse salt and freshly ground pepper
3 tablespoons olive oil
1 each, chopped: carrot, onion, rib celery
2 cloves garlic, chopped
2 cups beef broth
1 cup red wine
6 ounces tomato paste
2 bay leaves
1 sprig fresh thyme
8 ounces pappardelle egg noodles

1. Preheat oven to 325 degrees, Season meat generously with salt and pepper.

2. Heat olive oil in a Dutch oven over medium heat. Brown meat, about 2 minutes per side. Lift out; set aside. Add carrot, onion, celery and garlic to the pot. Cook, stirring, until softened, about 10 minutes. Add broth, wine, tomato paste, mushrooms, bay leaves and thyme. Heat to a boil. Return meat to the pot. Liquid should come about two thirds the way up the sides of the roast. Cover.

3. Place in oven; cook, turning roast once and basting occasionally, until very tender when prodded with a fork, 2-2 1/2 hours.

4. Set pot on stovetop. Remove meat from pot. Shred. Discard any fat. Discard bay leaves and thyme sprig. Stir shredded meat into sauce; keep warm over low heat.

5. Heat a large pot of salted water to a boil. Cook noodles until tender but firm. Drain. Add noodles to meat and sauce. Toss gently.

Pineapple Basil Bread Pudding

"Bread pudding. Break up bread into small pieces. Mix small can of pineapple bits, condensed milk, 3 eggs, cinnamon, a few chopped basil leaves and a little milk! Place chopped bread in a buttered casserole dish. Pour mixture on top. Bake at 350 for 45 minutes."

"First cook the ground chicken in a pan with some pineapple. Add some bacon. sauce is made with flour butter condensed milk and regular milk. Chop some fresh basil and add to the sauce. To make the pasta I used 2 eggs, 2 cups of flour and 1 tablespoon pineapple juice. Mix until a ball is formed. Cut in four and roll on floured board. Cut in lasagna sized pieces. Cook for approx 5 mins Drain. In a pan add a layer of noodles then meat and sauce, repeat. sprinkle parm and a little more basil on top. bake in oven til heated through. serve with sliced baguette topped with melted butter pineapple juice and some basil"

"to make my meatballs mix all the following
ground beef, about 2 pounds
jalapeno pepper, chopped

bread crumbs made from a fresh baguette (cut it up and threw in the oven)
fresh basil leaves chopped up
crushed pineapple
2 eggs
pepper
Worcestershire
garlic salt
Blair's After Death Sauce

for the sauce mix all the following then cooked to just a boil
condensed milk
corn starch
pineapple juice from the crushed pineapple
white vinegar
soy sauce
Worcestershire sauce 
the remaining crushed pineapple
Blair's after death sauce 

Roll the meatballs and place in a casserole dish. Pour the sauce on top and bake for an hour on 350. It would have been better on rice."

Crockpot Classic Beef Stew

This recipe came from myrecipes.com, this stew is delicious, one of the best I've made. Great for a cold winter day- especially this winter we've been having. A perfect comfort food.

What you will need:

- 1 pkg of stewing beef cut into 2-inch pieces
- 1 cup all purpose flour
- 1/3 cup olive oil
- 2 large onions- chopped
- 1 6oz can of tomato paste
- 1 cup dry red wine
- 3 medium sized potatoes- washed and cubed
- 2 large carrots- peeled and chopped
- 2 cups of beef broth
- 1 tbsp. salt
- 1 tsp. of thyme
- 1 bay leaf

Heat a skillet on medium heat with 2 tbsp. of olive oil. Coat your beef in the flour and brown meat a few pieces at a time, adding more oil as needed. Add to crockpot. Add the onion to the skillet, turn down heat to low and let sauté for about 10 minutes, then add in tomato paste and coat the onion, then transfer to crockpot. Pour wine in skillet and scrap up brown bits, then transfer to crockpot. Add the rest of the ingredients to the slow cooker and stir. Cook on low for 7 1/2 hours or on high for 4. Discard bay leaf when finished cooking.

Crock-pot Chili with Corn Bread Side

One of my all time favourite winter meals to warm up with is chili. I love to make it in the crock pot so all the flavors can meld together and make it even tastier. Cumin and chili powder are the usual spices I use to spice it up to have a nice taste, but use what ever is your go-to spices.


The skillet corn bread recipe I have been glued to now is by The Pioneer Woman. Its a new food to me, as it is not to big of a deal in Canada. Now that I have tried it, I do not think chili is complete with out it! Its so yummy and crumbles perfectly into chili. Oh gosh, you need to try it if you haven't already!

Here is my basic Crock-Pot Chili Recipe. It never turns out quite the same because I rarely put the same things in twice but this is always how it begins.

Basic Chili
1lb ground beef, cooked and drained (or ground chicken/turkey/pork, crumbled firm tofu, or nothing at all)
1 large onion, diced
2 cloves garlic, chopped fine
1 can diced tomatoes
1 can red kidney beans
1 can white kidney beans (I have replaced these with any other beans ie: chickpeas, pinto, lentils etc)
1 large can tomato sauce
2 cans of tomato soup
1 can sliced mushrooms, drained (or fresh if you have)
1.5 tbs ground cumin
1.5 tbs chili powder
salt and pepper
hot sauce to your spice level

optional ingredients I also like to add if they are on hand
1 chopped bell pepper (green, red, orange, yellow or mix them up)
2-3 stalks of celery, chopped
1 jalapeno pepper, seeds removed and chopped

Directions
Brown the ground beef in a fry pan along with the onion and garlic. Drain.

Place everything into the crock-pot and cook on high for at least 2 hours (low if you want to go longer)

Thats it! Now you can serve it along with this simple skillet corn bread recipe.

Skillet Corn Bread by The Pioneer Woman


Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup milk
1 whole egg
1/2 teaspoon baking soda
1/4 cup plus 2 tablespoons shortening

Directions
Preheat the oven to 450 degrees F.

Combine the cornmeal, flour, baking powder and salt in a bowl. Stir together.

Measure the buttermilk and milk into a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir.

Pour the milk mixture into the dry ingredients. Stir with a fork until combined.

In a small bowl, melt 1/4 cup shortening in the microwave. Slowly add the melted shortening to the batter, stirring until just combined.


In a cast-iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet. (The batter should sizzle.) Spread to even out the surface. Cook on the stovetop for 1 minute, and then transfer to the oven and bake until golden brown, 20 to 25 minutes. The edges should be crispy!

Cabbage Rolls with Sauerkraut

I found this recipe a few years ago and have fallen in love ever since! Although mine I did slightly different (I browned my meat and cooked the rice first, I only used the juice from the diced tomatoes, and instead of using tomato juice I used a no name tomato pasta sauce (and added a bit of water). The Sauerkraut mixed with the cabbage rolls give it a whole new flavour, it's so delicious!!! I suggest you all give it a try :)

What you will need:
- 1lb lean ground beef or pork
- 1 cup of uncooked rice (I cooked mine before mixing everything)
- 1 medium onion- chopped
- 1 clove garlic- minced
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 tsp paprika
- 1 can of tomato juice (I used 1 can of no name pasta sauce)
- 1 can (28 ounces) Sauerkraut
- 1 head of cabbage

Combine beef/pork, rice, onions, garlic,  pepper, garlic powder, salt and paprika in large bowl. (If you chose to cook your meat and rice first- cook them and then mix with rest of ingredients)

Steam heads of cabbage until leaves remove easily (about 5 minutes each in microwave along with 1/2 cup water, covered with plastic wrap works well) Take handfuls of meat mixture and roll up in cabbage leaves.

After covering the bottom of the pan, top with half of the sauerkraut and half of the tomatoes. Place rolls in roasting pan. Repeat with second layer. Pour tomato juice over top. Cover and bake 2 1/2 hours at 350 degrees. (If you have already cooked the rice and meat cook for 1 1/2- 2 hours)

Easy Barbeque Meatloaf

Here is my go-to meatloaf recipe that the entire family loves. It is quick to prepare as well as very moist and juicy. Using a BBQ sauce of your choice lets you vary the taste to your liking. My favourite to use is 
Bulls-Eye Guinness Barbeque Sauce. It has a smoky sweet taste. Another great sauce to use is 
PC Smokin' Stampede.



East Barbeque Meatloaf
2lb lean ground beef
1 pack Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup BBQ Sauce (or ketchup), divided in half

1. Mix all together (except half the bbq sauce)
2. Shape into loaf shape and put into bake dish.
3. Spread the rest of the bbq sauce on top.
3. Bake for around 1 hour or until it cooked through.

I made extra tomato sauce to serve on top with just a can of tomato soup and some extra BBQ sauce.

Monthly Feature: Mexican Stuff Shells By Sarah


What you will need:
1 lb. ground beef
1 package low-sodium taco seasoning
4 oz. cream cheese

14-16 jumbo pasta shells
1.5 cup salsa
1 cup taco sauce ( I forgot to get taco sauce so I just used more salsa)
1 cup cheddar cheese
1 cup monterey jack cheese
3 green onions
Sour cream

Preheat oven to 350°. In a frying pan cook ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely. While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.
Pour salsa on bottom of 9×13 baking dish. Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. Cover shells with taco sauce. Cover with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed. Top with any condiments you’d like (green onions, black olives, etc.) Serve with sour cream and/or more salsa.

At Home Fries Supreme!



This is a recipe I created a few years back when I was living with my sister in her old apartment. Its a take on Taco Bells Fries Supreme. Making it at home lets you control what goes into it and the quality of the products used. Its very simple to make and quick too. I took some short cuts and used frozen fries but if you have the time to make them yourself, all the power to ya!







You will need:
1 bag frozen french fries
1 lb lean ground beef
1 pack taco seasoning
toppings of your choice.
diced tomatoes
shredded lettuce
onions (green onions would have been great)
shredded cheese
salsa
sour cream
salsa con queso cheese sauce
hot sauce

1. Cook fries as directed on the package.
2. Brown the ground beef, drain off excess fat, add the taco seasoning and follow the directions on pack.
3. Once the fries and beef are both cooked, then you assemble them to your liking. Use as little or as much of a topping as you would like. Its up to you!

Cabbage 'Un'rolls

Cabbage rolls are a big hit in my house. The only thing is, with two kids and a baby, it's hard to find the time to prepare them. I was excited when I came across a recipe on facebook for what I have renamed "cabbage UNrolls". I tweaked the recipe, because I can't ever follow a recipe to the T, I just can't. The original recipe called for tomato sauce, of which I had none, and it left out the rice. Here's my version of the recipe.

 
 
1lb lean ground beef
1/2 a medium cabbage
1 medium onion, diced
2 cloves garlic, minced
1 lg can diced tomatoes
1/2 jar original ragu
1/2 small can of tomato paste
Salt and pepper
Garlic powder
2 cups minute rice, prepared according to box directions
 
In large frying pan, cook ground beef until almost brown. Add onions and garlic and cook until onions are translucent and meat is browned.
 
(At this point I transferred the meat/onion/garlic mixture to a pot, since I don't have a big enough frying pan. Obviously if you have one large enough, you won't need to)
 
To meat mixture, add the can of diced tomatoes, ragu, tomato paste, and cabbage. Season to taste with salt and pepper, and garlic powder. Bring to a boil, then cover, reduce heat and simmer, stirring occasionally for about 30 minutes or until cabbage is soft.
 
While everything is simmering, in a separate pot, prepare minute rice according to box directions. When your cabbage is as soft as you like, add rice to the big pot. Stir it up, and adjust seasonings if necessary.
 
How much easier is that? The entire time it was cooking the kids were coming in and out of the kitchen going "I can't wait for dinner, it smells SO good in here!". It made enough for all four of us to have seconds, plus a container for Mike to take to work today. I'll definitely be making this one again soon!
