5 Ingredients, 1 Masterpiece!

Yesterday while laying on my bed beside my husband while both Logan and Amelia were having a nap (at the same time!? I know, wonderful!),  I was browsing on Pinterest. James, my husband, saw this recipe and decided we needed to make it then and there. He even went into the kitchen and started to make graham cracker crumbs as that is what it called for but we only had actual graham crackers! Since he is a die hard peanut butter cup lover and was going to help, we made them.

After the blender went on, well both kids were up. I had Amelia attached to me in the baby wrap and James pretty much took this on himself. Sort of! I did some of the work too! 

Here is the recipe. It is amazing! They really do taste like a peanut butter cup. James describes them as a peanut butter nanaimo bar. The graham cracker is what gives it the same sort of crumbly texture as the real ones.


Peanut butter bars

1 cup butter, melted
2 cups graham cracker crumbs
2 cups icing sugar
1 cup + 4 tablespoons smooth peanut butter
1 1/2 cups chocolate chips

1. Mix together the melted butter, graham cracker crumbs, icing sugar, and 1 cup peanut butter.
2. Press into an ungreased 9×13 inch pan. 
3. Melt the chocolate chips with the peanut butter in the microwave in 30 second intervals until smooth. 
4. Spread over the peanut butter layer and refrigerate for 2 hours before cutting into squares.

Give it a try and you wont regret it!

Creamy Chicken-Noodle Soup

What you will need:
- 4 chicken thighs- boiled and shredded
- 2 carrots (finely chopped)
- 1 celery (finely chopped)
- 1 medium onion (finely chopped)
- 2 green onions (finely chopped)
- 1 peeled potato (finely chopped)
- 5 cups of chicken stalk
- 1 can of cream of chicken soup
- 1 can of corn
- 1 1/2 cup of egg noodles

Boil chicken thighs for an hour- or until cooked. Shred with a fork. In the meantime  in a large pot add a tbsp of olive oil and sautee carrots, celery, onion, and potato until half way cooked. Add in the chicken stalk, cream of chicken soup, and corn- simmer for 1 hour. Add cooked chicken and egg noodles, cook for another 10- 15 mins or until noodles are cooked. Add salt and pepper to taste.

Note: To make the soup not as chunky and more broth add 1 cup of noodles instead of 1 1/2 cups.

This is seriously the best chicken soup I've ever made- definitely a husband pleaser!

Irish Dip

While down in Florida visiting family a few years back, my aunt was having a St.Patrick's Day party. My cousin Rebecca in the spirit of the holiday, made the most amazing warm dip I've ever tasted! Now, this dip does contain sauerkraut, and I know it has an acquired taste, but I have shared this recipe with friends that did not like sauerkraut, but loved this dip! So hear is the recipe, I hope you all love it as much as I do, now I don't currently have a pic maybe Sunday but it's so delicious you have to try it, it's the perfect party recipe for St.Patty's day, and I guarantee that everyone will be asking for this recipe!



What you will need:
1 medium sized jar of sauerkraut
1/2lb of corned beef or Pastrami
1 cup thousand island dressing
1 cup of grated Swiss cheese
1 block of cream cheese

I usually make this dip in a crock pot, but a large pot will do as well. combine all ingredients in crock pot, and let it sit for about 20 minutes, stirring frequently (may take longer, it all depends how long it take for the cheese to melt and all the flavours combine)

server warm. you can server it with Melba toast, crackers, pita bread, corn chips...whatever you like!

Frozen Yogurt Drops

I had my nieces, Annabelle and Madison, over the other day for a movie (Wreck it Ralph, great movie!) and a sleepover. We decided to make a snack. I had tried it a few days before as a treat for Logan and he loved it! Every time he ate one he would go "mmmm", too cute! So having the girls over with me,I thought it would be fun to make it with them! A good snack that is healthy, easy enough for them to do alone and especially fun to do!             
Here is Madison and Annebelle ready to go!


 Using a cup to hold your baggie is very helpful for smaller hands to fill it with the yogurt. 

Here is what you need.
yogurt
a zipper seal bag
a spoon
a cup (if you want, it makes it a little easier to get the yogurt into the baggie)
scissors
a cookie sheet covered with parchment paper

Here is what you do.
Fill the baggie with the yogurt and cut the side corner off to be able to squeeze it out a corner.
Squeeze the yogurt onto the cookie sheet lined with parchment paper in little drops about the size of a dime.
Freeze for around 3 hours to make sure they are completely frozen.
Once frozen, lift off from the paper and enjoy right away as they melt quickly!

This is a great toddler friendly recipe as well. I will try this again (once my freezer has room in it again that is) but with a bunch of flavours and try to use applesauce too make it more interesting for Logan.

Turtle Cupcakes

So my momma's birthday was this week and I decided to create something extra special for her, since her fav candy is "Turtles" I thought why not turn this into a whole lotta delicious in a cupcake?????? So the results were AMAZING. You must try this!

First pick a chocolate cake batter (I used box cake because I have a 1 year old and no time to bake from scratch!) But you can use any cake mix you like... so cook them as cupcakes obviously....


Add the Pecans, then drizzle with caramel and melted chocolate...
I hope you love these as much as m family did :)

Easter Spirits

With Easter fast approaching I thought I would share some goodies I made from last year... don't worry new recipes will come when the day comes!!! I hope you get some creative ideas from this :) 

The recipe I used is Vanilla Cupcakes found HERE. The icing is a fluffy marshmallow frost found HERE.

The fun part is decorating...


To make the cupcakes colourful, just separate batter in 3 different bowls, and use food colouring to dye- then scoop the colours one at a time in each cupcake holder (filling half way)


To decorate, I dyed coconut green to make it look like grass (dyed with food colouring)
 This is fun fun part... gather all your favourite goodies to top the cupcakes!
 Then (the obvious part) decorate them!

Kale Chips

My sister Jennifer has been raving about kale and how great tasting it is for a few weeks now. Crispy and salty, and its a decent substitute to chip cravings. I had my doubts but curiosity got the best of me and decided to give it a try (how good could baked leaves be right?!). I told myself that the next time at the store if I saw it and it was a decent price, then I would try it. I found it and it was quite affordable at $2.49 a bunch. Olivia came over and we gave it a try! Of course we had a camera on hand to document the experience!


sea salt, olive oil, kale

        We made four different flavours to try. Cajun, sea salt and pepper, seasoned salt and plain sea salt.
Four tasty ways!

at 375 for around 8 minutes or until crispy
















While we were both not sure of the out come of this recipes taste we could not stop eating them! They were in fact very crunchy and very crispy but we both decided that they are no substitute for chips! 

Here is the recipe for you to try!

Ingredients :
a bunch of kale 
extra virgin olive oil
sea salt

Directions:
1. Preheat oven to 350 degrees ferinheight.
2. Wash the kale, being sure to get in all the nooks and crannies of the leaves. 
3. Dry completely (important so it does not go soggy in the oven).
4. Rip the kale leaves into chip sized pieces leaving out the stems.
5. Drizzle oil and season with sea salt. Rub it onto the leaves. 
6. Place on a baking sheet in a single layer and bake for around 8 minutes or until crispy. 
7. Remove and enjoy.

just a little outfit...

gilt.com- UMM HELLO!!!! You guys need to check out this website for sure! They have designer labels at discount prices! AND! the baby stuff? To KILL for <3 So my first experience with gilt.com I found these little outfits that I'm completely obsessed with.




1. Marie Chantal, Fair Island Cardigan: This little cardigan would look absolutely adorable, and keep those cold winter days at ease. Was: $104.00 Now: $45.00

2. Marie Chantal, Classic Coat: This coat I am completely obsessed with! I have not stopped thinking about it since I found it online last week. It makes me so happy, and I know my sweet little boy would look stunning! Was: $200.00 Now: $85.00

3. Jacadi, Baobab Bootie: Now, Phil is quite partial to this item, but me with the fringe fell head over heels! It's definitely a MUST HAVE on my list! Was: $40.00 Now: $20.00

4. Jacadi, Manfredo Pant: These I figure would go with any classic outfit, I consider them almost as a staple in his wardrobe collection. Was: $72.00 Now: $36.00
 
So adorable!!! Still obsessing. 


Cesar Salad Dressing

Throw everything in a blender:
- 3-4 cloves of garlic (4 depending how much you like garlic)
- 4 tbsp of olive or vegetable oil
- 3 tbsp of mayo
- dash of mustard
- dash of hot sauce
- salt and pepper to taste



Blend everything until smooth, also the creamier you want the dressing the more mayo you add. Then toss your salad with the dressing and add tons of Parmesan cheese!


For a healthier twist: Try Greek yogurt instead of mayo... let us know how it works! 





Oatmeal Carrot Banana Muffins


Anyone have a picky toddler at home where you have to practically hide vegetables in there foods so they are getting the proper nutrition? Well, my Noah is the pickiest. He won't eat meat, or any kind of veggies... but this recipe provides a balanced meal, it has protein and whole grain from the oatmeal, a vegetable from the carrot, dairy from the yogurt, and fruit from the banana! The best part is I only use half a cup of sugar for the whole recipe. This helps me sleep better at night knowing he is getting some nutrition from these muffins, I let him snack on them all day (usually he eats 3) of course he eats meals with them too, but there a great breakfast on the go and it's so easy to make! Try it out :)


I have also made a lot of variations with this recipe you can add any berries you like or even minus the carrot, but make sure you always have at least 1 banana (it's what holds it all together). 

NOTE: Make sure toothpick comes clean may need longer than 20 mins (depending on your oven).

Catnip Pillow

Want to learn how to make a simple pillow that your cats will love? Seriously this is so easy! My cat Luna went nuts when I gave it to her!
 
What you will need:

- Polyfill
- 2 pieces of 12x12 material (any pattern of your choice)
- sewing machine
- pinning needles
- catnip

Step 1:

Cut out 2 pieces of 12 x 12 fabric, and iron the pieces.

Step 2:

Pin the 2 fabrics along the outer edges with the inside facing outwards


Step 3:

Sew 3 of the outside edges together, and 1/2 of the last edge leaving 6 inches of open fabric (this is where we will need to fit the polyfil inside)

Step 4:

Turn the pillow inside out (so now the proper side of the fabric is showing)

Step5:

Stuff the pillow with the polyfill, and while doing that sprinkle the catnip inside all throughout the pillow.
Step 6:

Hand stitch the opening of the pillow together with tiny whip stitches.

And there you have the finished product! A beautifully sewn canip pillow that your animal will enjoy!
